Are you the type of person who is totally self-sufficient and can take care of yourself until sickness comes on and all you want is your mom or the next best thing, a significant other, to take care of you and make you feel better? Me too. I don’t envy anyone who is single, living alone for that reason alone. I’ve been there, it sucks! There is something about being sick that makes me feel helpless. And Nick is the same way. He came home from work the other night saying that he felt like he was getting sick. 48 hours later I hear a constant stream of “Babe, I don’t feel good”. Luckily before leaving the aeropuerto in Mexico on our last visit, we stopped at la farmacia and got an assortment of meds just for this type of situation.
Nick self-diagnosed himself as having a sinus infection and took the mexican meds accordingly. I am trying to heal him in a more natural manner with lots of orange juice, an assortment of soups, and some Jalapeño Cheddar Bacon Scones. What better way to clear the sinuses that jalapeño? And really, some bacon and cheddar cheese can’t hurt matters either, right? Want the recipe? Okay, here you go!
Jalapeño Cheddar Bacon Scones
Makes 8 Scones
1/2 pound bacon plus more for the bacon lovers in your house to nibble on
2 cups all-purpose flour
1 teaspoon salt
1 tablespoon baking powder
2 teaspoons sugar
4 tablespoons (1/2 stick) cold butter, cut into small pieces
1 cup grated cheddar cheese
1 cup plus 2 tablespoons whipping cream
Preheat the oven to 350 degrees.
Place the jalapeños on a baking sheet and bake in the oven until charred, turning every 10 minutes, for a total of 30-40 minutes. Remove from the oven and increase the temperature to 425 degrees.
Place the charred jalapeños in a container (preferably not plastic) and cover until cool enough to handle.
Once cooled, remove the skin, stem, and seeds and dice.
Meanwhile cook bacon in microwave or frying pan. Chop and set aside with the diced jalapeños.
In a large bowl, combine the flour, salt, baking powder and sugar. Add the butter and combine, leaving some of the butter in small chunks.
Add the cheddar cheese, diced jalapeños and chopped bacon. Stir to combine.
Add the whipping cream and combine to form a ball of dough. If the dough is still crumbly or some of the flour mixture remains at the bottom, add a little more whipping cream until the mixture is well combined and forms a solid ball of dough.
Slice into eight wedges and brush the remaining two tablespoons of whipping cream on top to ensure a nice, golden crust.
Bake for 20-25 minutes
