Repair Work

We’ve been having problems with our garbage disposal. Like periodically it won’t drain the sink and if we run it too long, water goes everywhere.  Nick is quite handy, but when it comes to a revolving blade, he wanted to leave that device to an expert.  I procrastinated way longer than I should have, but finally called the plumber last week.  His earliest available appointment was this morning.

Sure enough, the garbage disposal had a small crack down the side of it and needed to be replaced.  $135 and half and hour later we are now proud owners of a fully functional, non-leaking, brand new garbage disposal.  It’s an exciting day!

In other news, I’m still at Project Cookbook, this time with a Crock Pot dinner.

Holy high calorie!  This dish is 1/3 cheese which equals yummy but heavy.  The tortilla part of the enchilada casserole pretty much disintegrated in the 4-hour cooking process, so my expectations changed from being lasagna-like (as that was how the recipe instructs to assemble this dish) to just being a mess of ingredients.

Coming in at 489 calories per serving, it’s not that bad as long as you stick to one serving, but in total the dish makes eight servings, so I’ll be eating this for lunch for a while.  I don’t think I’ll make this dish again for just Nick and me, but if I ever host a group of people, I will definitely consider making this casserole!
