Not too much to share today. I’m counting down the days until Nick and I leave for our glorious vacation! But that’s about all the excitement I’ve got for today. As for that huge watermelon from last week’s co-op pickup, it made it into another Project Cookbook recipe! (And there is still some cut-up watermelon left!)

As usual with raw onions, I was nervous about this recipe. But the recipe instructed to soak the sliced onion in cold water and this washed off a lot of the sharp flavor that I don’t care for in raw onions.
Great Easy Meals: 250 Fun & Fast Recipes doesn’t give a ton of measurements for the side dishes so I try to make good judgement as to how much of each ingredient to use that isn’t specifically listed. For this recipe, the cashews and goat cheese were left without any specific measurement so I used one ounce of cashews and two ounces of goat cheese. With these measurements, the recipe came out to 317 calories per serving. It was pretty good. I liked the goat cheese in it, which added a nice flavor. If I have another huge watermelon to use up, I’ll consider this recipe again.
