Have I mentioned that I’ve partnered up with Peanut Butter & Co?  It can’t come as a surprise since this is my third Peanut Butter & Co. recipe.  So yeah, I’m on their Yum Squad :).  Anywho, I received two jars of  the Bee’s Knees.  Mostly, I’ve been using it to dollop  onto my daily oatmeal.  (I’ve been making one big batch of oatmeal on Sunday and bringing a single serving to work with me throughout the week.  This has worked out well, allowing me to maximize my precious sleep time and curb my hunger in the mid-morning.)  But since I had some “time” over the weekend, I thought I’d turn that tasty honey peanut butter into a quick bread.

So without further adieu, I’d like to introduce you to Honey-Nut Chocolate Banana Bread (I wanted to call it Monkey Bread, but that name is already taken by another tasty baked good).

Honey-Nut Chocolate Banana Bread

Makes 1 loaf

Ingredients:
1/2 cup whole wheat flour
1 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon cinnamon
2 eggs
1/2 cup sugar
1/2 cup vegetable oil
1/2 teaspoon vanilla
2 ripe bananas (mine was bright yellow, but I recommend you wait until it’s nice and speckled with brown spots)
1/2 cup Bee’s Knees Peanut Butter & Co peanut butter
1/4 chocolate chips

Preheat oven to 350 degrees F. Grease a loaf pan. In a medium mixing bowl, combine wheat and white flour, salt, baking soda, baking powder and cinnamon. In a separate large mixing bowl, whisk eggs and add sugar, oil and vanilla and whisk until blended. Add dry ingredients and stir until flour is just moistened. Do not over mix. In a small microwaveable bowl, microwave the Bee’s Knees peanut butter for 30 seconds, or until softened.  Add the bananas to the warmed peanut butter and mash.  Stir the peanut butter banana mixture and chocolate chips into the batter. Pour into the loaf pan.  Bake for 50-60 minutes or until tops are golden brown and a toothpick inserted into center of loaves comes out clean. Cool in pans for 10 minutes before turning loaf out on a wire rack to cool completely.
